Spiedo Valsabbino
The Spiedo Bresciano is a typical dish of the province of Brescia.
Is composed by birds, meat (pork, chicken or rabbit), potatoes, sage and served with polenta.
A good cooking takes about 4 hours since the spit must be cooked slowly. Cooking can be wood (olive wood or vine leaves a delicious scent), Charcoal (more comfortable than wood) or electric (not recommended because you lose the scent).
